I am convinced that this cooktop, the 36", 5-burner Capital Maestro, is the best sealed-burner cooktop available. It may not do what an open-burner can (I couldn't convince my wife to go that route), but it's the next best thing. We both love to cook, and I am a compulsive perfectionist, so did a lot of research before buying. We have had ours for about 6 months now and are very happy.
Its flames are blue, precise, jetted, and yes - noisy - one of the really cool things about it. My wife and I were both concerned about those comments on the reviews, but in the end, the noise just reminds you that it's working, and really efficiently. It sounds like a bunsen burner or a small propane torch - in a great way. And it heats water FAST. Hint - the 20k btu center burner gulps so much air that really large pans will block airflow, making the flame struggle - so flip the center "wok" grate over and set the pan on the wok grate's raised points and it will work fine. And for using a wok (which I don't do often), it's perfect. What a great idea!
I first noticed this cooktop because its burner mechanisms are held in place with large brass (non-rusting) hex-head fasteners - not cheap steel screws that corrode and break off, requiring the replacement of a multi-thoousand dollar cooktop when $4 worth of screws go bad (the fate of our previous 5-burner KitchenAid). This one looks like it will be good for decades.
And it is a breeze to clean, too. With the grates removed (warning - they are heavy - but manageable), the pan is a single expanse of stainless steel that wipes easily with a sponge. Just be careful to replace the ringes and caps properly after washing (easy to do - just pay attention) or the flame will not have the right shape.
And I don't really like stainless steel (the rest of our kitchen is white, as was our last cooktop), but this one is so impressive and the design is so right (I'm an architect) that I don't care. The knobs are large and easy to handle. The igniters work well. And it's made in the US. What more could you want? You won't regret the decision. Maybe nobody's heard of Capital, but you'll cook better and have a more stylish kitchen than anyone.

This is a very nice cook-top. The burner performance is even better than expected, the controls work nicely, and it has a high-quality, professional appearance. My only complaint is that most of the burners are very noisy, even to the point that the factory rep could hear the sounds over the phone. I'm unsure at this point if it needs service or if the noises will abate as it gets more use. Overall, however, this cook-top is a very good value.

This is a fantastic stove-top, with precise controls, a real simmer burner, and very good heat distribution for sealed burners (though you have to size your vessels accordingly on the big burners and use cast iron to pan broil -- but it's worth it if you're like me and don't have the ventilation capacity for a 30k BTU open burner range top). Further, it's easy to clean and doesn't have the faux-pro look of certain more expensive, lower-performing brands with red knobs and logos. Get this one!
