Having previously used both electric and gas cooktops, I wondered if the advantage of an induction cooktop was really worth the added cost. IT IS. This is my favorite appliance, hands down. Water really does boil in 90 seconds. Like a huge pot full of water. You have no idea how great that is. I also like the simmer function and the smooth surface of the cooktop.
I am not a gas cooktop snob, but now I AM an induction snob. When I cook at my mom's or MIL's houses, I can't help how disappointed I am in their otherwise gorgeous high-end cooktops! They are just not as good.
I would gladly pay twice as much for this appliance if necessary.
