It does it by using electro-magnetic fields to make your metal pot or pan itself the heating element. In other words, the pan isn't heated using a gas flame or electric heating element. Rated 1 out of 5 by Siemens Induction Cooktop I took many hours to chose a Siemens Induction Cooktop for my renovated kitchen and this product is not rated to the price. Some time ago I accidently knocked over a coffee cup next to the cooktop and chipped a piece out of the glass and tonight I knocked a bottle of vinegar and the cooktop has absolutley shattered. I am now have to find another cooktop of another brand to replace the hole in my granite. Thank you Siemens 12/10/09
