Rated 4 out of 5 by Fantastic cooktop/awesome ovens After 4 months of researching people's reviews of Capital, DCS, Wolf, Viking, Dacor and other brands, I purchased a Capital Culinarian 48" gas stove to replace an old Garland stove I had been using while building a new home. The main reason I chose Capital is the open burner system which allows the gas flame to be centered directly under your pots and pans. This is a feature I loved with my old Garland stove and it allows really fast, high temperature cooking. Sure, a major spill-over will be messy to clean but the heavy stainless steel drip pans are easy to access and dishwasher safe ... a major plus in my book. The gas heads are cast iron, come apart easily and can be cleaned in soapy water in case they are affected. And face it ... all major spill-overs are messy regardless whether you choose open or sealed burners. This is an expensive investment for me. But I look at it as a 'once in a lifetime' purchase (I hope) since I like to cook and I want a quality piece of equipment to work with for a long, long time. So the following comments are my observations after two months of use ... and note I'm not a chef. All the specs are accurate so I won't repeat them here. The only glitch was that the smaller oven shipped with 2 racks instead of the advertised 3. You'd think you wouldn't need a 3rd but I did a batch of Christmas cookies and it would have helped speed the process. I'm told by AJ Madison that Capital is shipping me the remaining one. I did not order the grill or griddle options since I own a Big Green Egg and separate gas grill for outdoor cooking and have a cast iron griddle I love. The stove comes apart into numerous components which removes significant weight (the stove is heavy) making it easier to move the unit into it's final position. This is also a huge plus for cleaning. All parts are quality, heavy guage ... you can do bicep curles with the fantastic cast iron grates. And I am impressed how easy it is to remove and re-attached the doors. Warning ... they are heavy too. The stove is incredibly very well insulated and I no longer worry about little ones accidentially burning themselves by touching a hot oven ... the outside stays cool. As for performance ... it's wonderful. The 7, 22,500 BTU burners heat pans increadibly fast and evenly yet can be turned down to a meer flicker for near-simmer heat. The 'true simmer' burner is amazing. I made turkey stock from the Thanksgiving bird that was beautifully clear. I also steamed a pudding that came out perfect ... the water bath never boiled yet produced ample steam to do the job. The ovens are very well insulated, heat up fast and perform beautifully. I'm impressed with the speed the little oven heats up and the eveness of heat even though my unit doesn't have a convection fan. The bigger oven with the convection fan does an amazing job as well. My roasts, pies and cakes have turned out very well. The Convection Fan really does speed up cooking ... so watch your food carefully. For example .... I tried out the rotisserie with a pork shoulder roast using the infared broiler with Convection fan on. Fun! (note ... you can't bake and use the rotisserie because the drip pan has to rest on the bottom of the stove affecting the temperature sensors) The recipe suggested it would take about 4 hours to cook on an outdoor rotisserie ... the Capital did it in about 2.5 hours well ahead of when the guests were arriving. Still, the outside was wonderfully crisp, the inside juicy. Using the rotisserie with the infared broiler can be a bit messy since fat tends to spatter around. But the surface of the oven was easy to wipe clean with a damp cloth and the oven is SELF CLEANING! The final feature that impresses me about this stove. I haven't tried it yet because the exhaust hood isn't installed and self cleaning ovens produce a bit of smoke. But still ... what a great feature to have. Overall, a fantastic stove. I'm ordering the matching backsplash with shelf and exhaust hood to complete the look and functionality of my cooking system! A few criticisms or cautions are warranted for all products and here are mine: - The stainless steel exterior is lovely but requires attention to keep clean. I think a colored enamel option would be nice. - The dials are heavy duty and the settings are printed with lovely red ink ... which may be a challenge to read against the shiny stainless steel for older eyes. I keep reading glasses handy. - The height adjustment screws are not easy to access so do your adjustments before final placement. I'm going to raise mine so I have to pull it out, take off the front panel ... you get the picture. - A major spill-over on the top will be messy to clean even though the drip pans are easy to access. - I placed a remote temperature gauge inside and monitored the temperature swings between 'heating' and 'resting.' There were some wide swings of almost 50 degrees. At first I was concerned then noticed everything I baked turned out just fine. Still ... monitor your baking/roasting, etc. the first couple of times until you get used to the ovens. Overall review? LOVE it and I'm the envy of my friends and family.
