Rated 4 out of 5 by Captal 36" Rangetop I purchased the 36" range top with the Grill (3x 23k, 1 simmer burner, and 18kBTU grill) AJ Madison's customer service was outstanding (5 Stars). Numerous emails and notifications throughout the purchase and delivery keeps the customer extremely well informed. I knew the status of my order and shipping at all times. This is an excellent cooktop for people who want a high level of cooking performance in their kitchen. The open burner design produces extremely even heat across the pan. There is more than enough BTU in each of the 23k burners to control temperature even when adding cool or cold meats to the cooking dish. The burners do take a small amount of time to get used to if you previously had low BTU / performance gas burners. The burners will quickly bring your pot or pan up to temperature and the initial tendency is to cook at too high of a temp. The response to temp changes is almost instantaneous depending on the weight and type of pan you are using. When you turn the knobs clockwise to the ignite position The gas goes from a closed/off position to light/high position. So once the burner is light; continuing to rotate the knob clockwise turns the burner down from Light/High to low. So what you get, once the burner is light, is a...low - high -low…which can be confusing at first. One other comment on the burners. I have found that the burners will not fully light (IE every hole with a blue flame) without a pot or pan on the grate. You have to cycle the knob from low to high to get the burner to fully light. The solution it to put a pan or pot on top and the burners light perfectly. I think the pan provides back pressure for the gas to fully ignite across the burner. Once the burners fully light there is no issue with all the holes staying light. Its just the initial light-off. One issue I do have is the simmer…It is difficult to simmer because of the power of the burners. IE the simmer/low position will bring most dishes to a low boil, however if you put a cover on the pot depending on size you may not get as low of a simmer as you might like. There is a simmer burner rated at 140 deg F, however my experience is that you cannot get small pots to simmer at a sub-boiling temperature IE 140 deg. I do like the simmer burner for smaller radius pots (I have AlClad pots that are about 5"-6" in diameter. The simmer burner does a great job of keeping the flame on the bottom of the small pots/pans. I like steel cut oats and use my small ALCLAD radius pot to make about 1/2C of oats and 1.5C of water and I cannot get the burner low enough with the cover on. There is a simmer adjustment that can be made …I have not attempted this as of yet, nor have I tried a simmer plate (not sure if it will help) I have not used the grill as of yet so no review there. Of note one of my burner grates was defective that is one of the prongs was lower than the rest causing pans to rock while sitting on the grate. I called Capital and talked with their customer service rep. I took a couple of photos with a straight edge capturing the defect and they sent me out a new grate ASAP. Overall very happy with the performance of the 12/20/13
